OzHarvest’s Royal Bread and Butter Pudding

Ingredients

6 eggs

100g castor sugar

240ml cream

225ml milk

1 vanilla pod

3 croissants, stale

30g slivered almonds

30g cranberries

10g chopped dried apricot 

PREPARATION

Place eggs and sugar into a large bowl and whisk until pale and frothy.

Place cream, milk and vanilla into a heavy based pot and bring to a simmer.

Pour simmered milk mixture into the egg mixture, whisking continuously.

Pass this mixture through a strainer, place into a bowl.
